The version of Deck the Halls that we sing today dates back to 1862, when Thomas Oliphant wrote English lyrics to a Welsh melody that was already hundreds of years old. The original Welsh song ("Nos Galan") was actually about New Years Eve, not Christmas, but it still featured the "fa la la" sections that we know and love. OIiphant titled his new carol "Deck the Hall", but an S was being added as early as 1892 and has stuck around since.
